This month's featured bánh mì comes from Chef Kazu of Fukuro, inspired by his time in New York. Fresh out of college and adjusting to life in a new place, he sought comfort in chicken teriyaki, a dish that reminded him of his roots in Fukuoka. Mentaiko, still beloved in his hometown, adds a special touch to this sandwich. This bánh mì reflects these nostalgic flavours, featuring succulent teriyaki chicken, crisp cabbage salad, and mentaiko mayonnaise, topped with onion, spring onion and sprinkles of sesame seeds, all nestled in between a toasted baguette.
